Salsify and making dried apple rings
I've just harvested some of the Salsify I planted earlier in the year. Here is how it looks.
Its on the small side, but I'll clean it up and put it in the stew we'll eat for supper tonight.
I wrote the above a bit earlier. The stew is well under way and the Salsify has been cleaned up and chopped into the stew. It tastes good.
While cooking I decided to use some of the rapidly softening apples I've been storing and dry them into apple rings. To do this, core them, peel them and slice thinly then put on a slotted tray of some sort - I used one of Liz's things she stands bread on when it comes out of the oven - and place on the top plate of an Alpha/Aga or equivalent for new fangled devices.
Turn the slices every 20 mins or so until they are dried out - but not too dried out or they are a bit chewy. I've had to do several batches as the kids keep coming in and nicking them!
So, that will be something good to put in their lunch boxes next week...

I used to do a side dish with salsify when I was a chef. Basically breadcrumbed, deep fried and served on tomato sauce... it was lovely!
